Steamed Clams with Chorizo and Corn Recipe
*This is absolutely one of our favorite recipes!
Prep time: 30 minutes
Cook time: 40 minutes
Ingredients:
1 tbsp olive oil
1/2 pound chorizo chopped (may be substituted with sausage)
1/2 cup finely chopped onion
1 tablespoon chopped garlic
1 cup dry white wine
1 cup fresh corn kernels
2 dozen Littleneck Clams
salt and pepper
chopped parsley
Loaf of crusty bread
Directions:
Step 1
Heat the oil in a medium stock pot over medium heat. Add the chorizo and sauté until golden brown. Remove and place on a plate lined with paper towels.
Step 2
Drain all but 2 tablespoons of fat from the pan and return to heat.Add the onions and garlic and cook until soft. Add white wine and reduce by half.
Step 3
Then add the corn and clams, season with salt and pepper and continue cooking until clams open.
Step 4
Remove from heat and add parsley.
Serve in bowls with slices of crusty bread and enjoy.
